POST MORTEM #2: PINOT NOIR Mixed fermentation Ale 2021 5.0%
Brewed out of a love of Belgian Oude Gueuze and lambics. We produced a Turbid Wort from barley and unmalted wheat and fermented in tank with a mixed culture. It was then transferred into ex-Pinot Noir wine barrels for spontaneous secondary fermentation and aging for 14 months. Refreshing acidity. Apple, dried fruits and subtle funk.
