POST MORTEM #3: GOOSEBERRY Chardonnay Mixed Fermentation Ale 2022 5.5%
Our Turbid Wort, made from barley & unmalted wheat was fermented using a mixed culture in stainless steel. And then spontaneous fermentation in ex-Chardonnay oak casks for 14 months. The resulting beer was then aged further on wild gooseberries for 6 months. Clean, refreshing acidity. Tannic oak. Sparkling apple, white grape and citrus. Subtle funk.
